Bookbinder’s Chef To Demonstrate Cooking at NCC

Bookbinder’s Chef To Demonstrate Cooking at NCC

David Cunningham, executive chef at Old Original Bookbinder’s Restaurant in Philadelphia, will present a cooking demonstration at Northampton Community College (NCC) on Friday, March 26, at 6:00 p.m., at the Lipkin Theatre in Kopecek Hall, NCC Main Campus, 3835 Green Pond Road, Bethlehem Township. Dishes to be prepared and sampled include:

· Tuna tartare with wasabi remoulade, sesame and Asian cucumber

· Smoked and fresh salmon rillettes with dill and yogurt

· Sugar cane skewered shrimp with avocado, red onion and cilantro salsa

The cost is $10 per person and must be paid in advance.

Trained at the Ecole Superiéure de Cuisine Française in Paris, Cunningham has cooked at the 3-star restaurants L’Auberge de Lill in Alsace and Hotel Bristol in Paris as well as at top American establishments. His food is noted for its emphasis on the freshest ingredients and ever-evolving variety.

“To cook simply is actually very complex,” Cunningham says. “There is no place to hide—not under sauces or camouflaged by extra ingredients or intense flavors. It takes skill and practice to make a dish simple.”

The Chef-in-Residence program was established by The Wood Company to enhance the culinary arts program. Since the 2000-2001 school year, numerous prominent chefs have participated in this program.
