The Secret Ingredient is NCC

Allentown Iron Chef winner is NCC alumni

Mia Rossi,

On August 30 – 31, four Northampton Community College (NCC) alumni entered the Iron Chef competition at the Allentown Fair.

Culinary arts alumni, Kayla Swinicki, and defending champion from the previous year, took home the win with her decadent dishes. The owner of Okaysions Katering in Phillipsburg, NJ, made a crispy escargot wonton over seaweed salad with citrus peanuts and honey hoisin glaze along with strawberry hoisin hot wings. The dish that pushed it over the edge was her funnel cake francaise, dredged in a garlic egg batter and pan fried.

Other culinary arts alumni who also competed that afternoon were Estaban Morales, Air Products corporate chef, John Abela, Zest sous chef and Steven Brett, Torre chef.

Susan Roth, professor of culinary arts at NCC, said of Swinicki’s win, “We’re very proud of Kayla. She was a wonderfully creative student years ago, and she was our first sous chef at Mitzi’s Table, too.”
